Try this refreshing green cooler this summer!
Next time you’re at the market pick up some organic green kale, a bag of large organic Fuji or other sweet apple, a lemon or two, and an organic cucumber so you can make this delicious and refreshing cooler. Whenever I’m at Egg and I for breakfast I order their Kale Cooler, absolutely delicious. This is my version of their drink as I don’t have their recipe. Mine isn’t quite as sweet, but I’m ok with that, wanting something lower on the glycemic index.
If you have a juicer, this is easier because it automatically separates the pulp from the juice. I gave mine away when I sold my house, but my blender works fine. It just means I have to add a step, straining the pulp from the juice as I pour it into a glass filled with ice. I save the pulp to add to a smoothie, adding fiber, and the flavors in the smoothie cover the flavor of the pulp.
Just a couple of stemmed kale leaves, one half of a cucumber, juice of a lemon, and 2 large sweet apples plus a pinch of sea salt and you’ve got a slightly sweet beverage that can take the place of iced tea. Since I no longer use caffeine, this is a welcome drink on a hot afternoon!
Refreshing Green Kale Cooler
2-3 kale leaves stripped from the stem
2 large sweet apples, cored (or 3 small apples)
1/2 cucumber, peeled if waxed coating
juice of a large lemon
pinch of sea salt
Place all the ingredients in a blender and add 2 cups of filtered water. Blend until completely smooth.
Strain into a glass filled with ice and enjoy! If you like it sweeter, add a touch of stevia. Personally, I don’t want a sweet drink when I want to cool off. I’m looking for something that refreshes and this fills the bill for me.
