Flourless Chocolate Brownies

These are moist and chocolatey, and easy to make.  I use coconut sugar, but substitute raw local honey or real maple syrup if you prefer.  I’ve used all three on various occasions, depending on what was in my pantry.

A nice treat for the Holidays that is gluten- free!



Flourless Chocolate Brownies

1 cup almond butter

1 ½ cups grated zucchini

1/3 cup coconut sugar

1 egg

1 tsp vanilla

1 tsp baking soda

1 tsp cinnamon

1 cup chocolate chips (Enjoy Life brand: soy-, dairy-, and gluten-free)


Preheat the oven to 350°.


Grate the zucchini using a food processor or hand grater.

Combine all the ingredients thoroughly in a bowl.


Pour into a greased 9×9 inch baking dish.

Bake 35-45 minutes until a toothpick comes out clean.


I have made this recipe with the zucchini and almond butter, but also with cashew butter and golden beets when that’s what was in the refrigerator.  Equally good either way!
